Alex Pope founded local pig. The article says the exec chef at the floundry is Devin Campbell who has in common with Alex Pope having been sous chef at the American.

I think in theory I want to make it to KC next weekend but life is volatile these days (start new job Monday, in contract on a house etc.) If that slides I should be able to make it out at some point in may and we are locked and loaded for taps and tastes.

I never had problems with 70/30 on a false bottom with constant re-circulation and fly sparging but always on a toilet braid type thing with batch sparging. I think that is just one of those boundary conditions where the lauter mechanics tend to get very important.
