Gin Barrel Aged Beer

Postby localbrewer » July 11th, 2017, 3:11 pm

I am picking up a Whiskey Barrel that had a 2nd use of Cider with Blueberry and Pomegranates followed by a 3rd use of Gin for 4.5 months. At this point I am trying to figure out what type of beer to put into Gin barrel. Suggestions?

Saison would be my recommendation

That is what I am thinking too, but I want to make sure that the yeast does not cause to much esters causing the gin flavor to be lost. Thinking about adding peaches too, maybe a gallon with cinnamon, maybe.
